This chipotle shrimp skillet is where fire and flavor meet. Creamy, smoky, a little sweet, and unapologetically spicy—this one-pan wonder features plump shrimp, fire-roasted corn, and a creamy chipotle-laced sauce that coats every single bite.

🛒 Ingredients:

  • 1 lb shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1/2 onion, diced

  • 1 red bell pepper, chopped

  • 1 cup fire-roasted corn

  • 2 cloves garlic, minced

  • 1 tsp chipotle powder OR 1 chipotle pepper in adobo, minced

  • 1/2 tsp smoked paprika

  • 1/2 tsp cumin

  • Salt and pepper, to taste

  • 1/2 cup heavy cream

  • 1/4 cup chicken broth

  • Juice of 1 lime

  • Fresh cilantro (optional)

🍳 Instructions:

  1. Heat oil and butter in a large skillet. Add shrimp, season with salt, pepper, and half the chipotle. Sear 2–3 minutes per side. Remove and set aside.

  2. In the same skillet, sauté onion and red bell pepper for 5 minutes.

  3. Stir in garlic, corn, paprika, cumin, and remaining chipotle. Cook for 1 minute.

  4. Add chicken broth and heavy cream. Simmer 2–3 minutes until thickened slightly.

  5. Return shrimp. Stir to coat. Finish with lime juice and cilantro if using. Serve hot.
